You will find hereafter a synthesis regarding the Fish diseases adn their
risk for human health :
VHS : Viral Haemorrhagic septicaemia
IHN : Infectious Haemotopoietic necrosis
Obviously, these diseases do not represent any risk for human health (until
we can prove the contrary). The European directive 91/67/EEC is only there
to protect Animal Health. There is no restriction to sell for human
consumption infected fishes. (according to DG VI at the European Commission).
One interesting fact : some supermarkets in Scotland refuse to sell some
salmon infected with ISA. It's a private initiative, linked with the fear of
the famous "mad cow" disease (as we French call it) - Bovine Spongiform
Encephalopathy.
Special thanks for all the people who answered me.
