    UF Shrimp School
    The University of Florida's annual Shrimp School is scheduled for June 3-5, 2008 in Gainesville, FL, USA. The 2008 course will include presentations and hands-on training with all aspects of product quality and safety, sensory/decomposition analysis, use of processing aids, labeling regulations for allergies, organic and natural products, addressing problems with international sources, and an update on FDA's new HACCP guidelines due for release in summer 2008. The two and half days school is useful for experienced and new suppliers, processors, buyers, importers, exporters, inspectors or quality control managers and others in the private industry from management through production. On completion of the course, participants are provided with certificates for future reference as alumni of the UF-Shrimp School.
