Does anyone have information on meat yields and meat-shell ratios for
market-size (3") Eastern oysters, Crassostrea virginica? We are
specifically looking for information based on bushels or 200-count bags.

References are much appreciated. Thank you.

    Subject: oyster production levels

Tessa: I was wondering of you had information on oyster production
levels in bags or bushels on a web site. The NMFS website converts all
production to tons of meat weight. I have found out that the conversion
is based on a factor that the state provides. States that sell smaller
oysters will have a much lower meat weight compared to the number of
bushels actually sold. The feds want to compare lobsters and fin fish
to shellfish but this is misleading. I wanted to be able to compare
sales on a bag or bushel basis. Know of any other websites. dhc
