2 inch oysters

    Hello seafood experts.

    Does anyone know what the marketability of a 2-inch (5 centimeters) oyster is in the U.S. and internationally? (Measurement is taken on oyster shell from hinge to mouth.) I have heard 2-inch oysters are sold on the western U.S. coast in what is referred to as the cocktail market. Can someone quote some economics on 2-inch oysters or refer me to someone who can?
