Crabmeat Decomp

Hi All, and Happy New Year!
I know this issue was discussed some time in 2007, but I did not know I would need the info, so did not save it.
    In a refrigerated plant environment, it may be difficult to get a good reading for decomp by sensory when hundreds of cans are opened a day, and every can needs to be checked. Has anyone come up with a technology, low or high tech, that can get the job done?
    I really appreciate any ideas you may have. Thanks.
