My impression is that Steve might be actually more interested in Omega 3
content of Alaska Pollock skinless fillets than in oil from round fish.
In round Alaska Pollock, that is considered lean muscle fish, most of
fats may be located in the liver (that is not normally consumed the same
way as the fillets are) and consequently those fats would dominate the
fatty acid profile of the whole fish. Typically, phospholipids comprise
a significant component of fats in lean muscle and they are fairly high
in polyunsaturated fatty acids including Omega 3. Consequently, even in
the low fat content fillets there may be still a very few hundred
milligrams of Omega 3 per 100 g of the flesh.

For most of the year, the total Omega 3 content is between 23.5 and 26%.
The DHA is between 6 and 7% and the EPA is between 12.5 and 14%.
The concentration doesn't change much between seasons, but the yield of
oil from round fish does. The concentration of omega 3 does change
depending on the location where the pollock were harvested, most likely
due to the change in their diet.
