I am trying to help a local seafood company that are going to smoke trout.
The company is trying to convert old fish processing company to trout
smoking. Therefore, they will renew the factory and buy new equipments.
I would appreciate your advices and information about the type of equipments
and the reliable companies that sells them relating to trout smoking. The
size of the fish would be in between 1 -2 kg. Daily process will be around 2
tons. The owner of the company prefers fish filleted before smoking both
cold and hot smoking.
