I recall that the HACCP books are available online when you sign up for the
course. They are also available in CD format (given to participants) during
    the course

Cornell University offers the HACCP course on line but you'd still need
to spend the last day in a classroom doing the final project.

You can order the two books used in the HACCP class from
Florida Sea Grant / IFAS-Extension Bookstore
    University of Florida
    P.O. Box 110011
    Gainesville, FL 32611-0011
    800-226-1764 or 352-392-1764 or
    http://ifasbooks.ufl.edu

(This is old information - if anybody knows of any changes, please let
    me know.)
