The University of Florida together with Laitram Machinery will be conducting the second annual "Cooked Shrimp School" in New Orleans, LA February 6th - 8th, 2007. The school focuses on the latest trends in cooked shrimp products, thermal process and heat penetration related to safety and quality / yields, process and equipment validations and FDA regulations pertaining to cooking and ready-to-eat shrimp handling.
