    The USDC's Seafood Inspection Program National Analytical Laboratory Services has published "Working Instructions for Ohaus Balance Model MB200 Moisture Determination" Aug. 18, 2005, 13pp + numerous supplements including data sheets, diagrams, calibration directions, etc. The author is Jane E. Fox-Dobson.
     
    Ms. Fox-Dobson was kind enough to visit our plant in 2005 or early 2006 and help our QC staff standardize our own methodologies with those used by the USDC's Analytical Lab and left a copy of this useful reference. Since you're using the MB35 model, I'm sure some particulars may need to be tweeked, but she'd probably be able to help you with that.     Incidentally, I got a call just a day or two ago from a producer with the tv program Inside Edition on this topic, so it appears interest in the subject is again on the upswing.

    Where can I find direction or standards for moisture testing on sea or bay scallops in the USA? I have had very little luck looking on the web. I'm looking for preparation guidelines for both fresh and frozen. I am working with an Ohaus MB35.
