    Hi Jon,

    Thanks for your response, we follow a strict monitoring and controls given by the US authorities on food safety, bioterrorism Act and US grade inspection, declaration of the chemical used in the shrimp processing is paramount in every seafood business and so do we (if applicable), and yes, if you could give me the reference on any substances (phosphate or non-phosphate based) that can enhance the quality of shrimps especially the moisture holding capacity (which is already there) - and we will study it really carefully in our lab, if this forum has not lost its purpose yet - to share knowledge.

    Please correct me if I am wrong, I may have gotten the wrong impression from your post. What you meant to say was:

    Does anyone have a suggestion on a superior alternative to phosphates in shrimp processing?

    The phosphate we currently use is as a processing aid to assist peeling and also helps to retain the moisture that is ALREADY present. There are other beneficial effects that I can enlighten you on if you are interested (Yes, I would be interested, very much so). And absolutely, the residual is so small that it doesn't even have to be declared on the label. (Am I right so far?)
    Because surely, we wouldn't want people to pay shrimp prices for water, or to be eating chemicals they don't even know are present, or get a product that is inferior to the "natural". Or, heaven forbid, break any U.S. food regulations.

    First of all I would like to say Happy New Year. Wish that 2007 is a good and healthy year for everybody!

    I'm from a shrimp processing company in Indonesia.

    I have couple of questions on shrimp treatment issue.

    We are currently using phosphate based chemical for treatment of the shrimps (Sodium Tripolyphosphate / STPP) but the weight pick up is not quite satisfying, we want to do a bit more research on, maybe or potentially new chemical out there which might be able to be applied in our processing.

    Based on my knowledge, phosphate based chemicals are better in the capacity of holding more liquid and moisture in shrimp muscle than any other non-phosphate based chemicals.

    I want to know is there any other chemicals that can be used as a good substitution for STPP which good for shrimp weight pick up after soaking / treatment?
