    Dear Mr. Donny,

    In my doctoral thesis I worked with shrimp freezing optimizaion associated
    with phosphate treatment. Here in Brazil we have a lot of bends of
    phosphates each with specific results. I don´t know the percentage of
    phosphate that you used but the concentration and time of exposure is very
    importante to reach the best WCH and the best sensorial atributes.

    I'm just writing some articles with phosphates application in seafood and
    when publish I'll bring you, ok?

    Dear All,
    First of all I would like to say Happy New Year. Wish that 2007 is a good
    and healthy year for everybody!
    I’m from a shrimp processing company in Indonesia.
    I have couple of questions on shrimp treatment issue.
    We are currently using phosphate based chemical for treatment of the shrimps
    (Sodium Tripolyphosphate / STPP) but the weight pick up is not quite
    satisfying, we want to do a bit more research on, maybe or potentially new
    chemical out there which might be able to be applied in our processing.
    Based on my knowledge, phosphate based chemicals are better in the capacity
    of holding more liquid and moisture in shrimp muscle than any other
    non-phosphate based chemicals.
    I want to know is there any other chemicals that can be used as a good
    substitution for STPP which good for shrimp weight pick up after soaking /
    treatment?
