Tuna for the EU must be approved as being histamine free. You MUST take a
good hard look at how the fish are harvested before any credible testing can be
done to insure that the fish are histamine free according to EU testing
standards.
Histamines are very rarely ever formed at the processing facility. It's the
onboard handling that will have the largest influence.
