Written black and white in the Regulation EC No 852/2004 - Chapter
VIII: Personal hygiene.
No worker sick or susceptible to be carrier of a pathogen agent
(infections, disease history, etc.) shall be allowed to be in contact
or manipulate foodstuff. it is the responsibility of the food
business operator to ensure that the workers handle foodstuff are in
good health conditions, that is to say you have to prove that your
people are healthy and you manage to ensure a monitoring.
