Hello All,
I was looking for some input regarding cold smoking Albacore Tuna last year
and didn't get any responses so I would like to ask again. I don't have any
experience with cold smoking but I do know the concerns with tuna and
HACCP, can cold smoking
Albacore be done safely ? The end product will most likely be frozen . If
the product was fresh in a vaccum sealed bag would the use of a TTI tag on
each unit be needed?
