Dr. Dee Graham (R&D Enterprises, Walnut Creek, CA e-mail:
DeeG213050@aol.com), an expert on ozone applications in food processing,
has the following to share regarding the messages that have been shared on
    this listserv:

"It is shocking how much misinformation is getting kicked around, some
serious!  Notably, PVC is very stable to ozone but brass is not a good
choice for ozone contact, e.g. with fittings, pump heads, etc.   Stainless
steel is best for gas tubing mainly because it is physically stronger and
less likely to be damaged resulting in a possible leak. Ozone in water is
easily and economically measured with paper Test strips or titration (HACH
test Kits www.hach.com) and continuously with dissolved ozone monitors
sold by several reliable companies (see Ozone News, International Ozone
Association www.io3a.org for vendor ads)  Ozone in air can be monitored
with a moderately priced hand-held made unit by ECO Sensors
(www.ecosensors.com) or continuously with more expensive electronic
sensors such as INUSA,Inc.(www.inusacorp.com) and ATI Analytical
Technology (www.analyticaltechnology.com) I hope these brief comments will
help to clarify a few issues.  Regards, Dee"

Dr. Graham is not subscribed to the seafood listserv. I contacted him for
his opinion when the ozone discussion started up.

For your information, California State University Fresno hosted an Ozone
Conference in 2002: "Agriculture and Food Processing Applications of
Ozone as an Antimicrobial Agent." Abstracts from that conference are
    posted at: http://cati.csufresno.edu/ozone/ozone_III/ozone%20III.htm
