    There are two pdf files which you can download which describe enzyme
    reactions with examples of the PPO reaction which is the first step in
    melanosis. You can download it as a full page in color, or as B&W with 3 or
    6 slides per page. In addition below the lectures are two other papers on
    inhibition of shrimp melanosis.
