The July 2005 issue of Seafood Business has an informative article on the
US Department of Agriculture which has formed a task force to draft
organic standards for farmed seafood. (The article notes that there is no
task force named for organic standards of wild seafood). Without a US
organic-seafood-certification program, any seafood product can be called
"organic" but cannot use a USDA organic label. The article notes that a
future program would define what fish can or can't be called "organic."
By this fall, the task force may have draft standards to present to the
National Organic Standards Board (http://www.ams.usda.gov/nosb/index.htm).
