Yes, the Escolar is a scombroide and ofcourse we have
to have in consideration, the two chemical hazard:
firts one associated with natural purgative oil (is
natural is imposible the control of it
concentration)and the second one associated with
scombro toxin (histamin) that is controlled with
laboratory analisis (< 50ppm)of the same way that to
mahi, tuna, swordfish can be poisoning, if this
scombro toxin concentration is High.
You rigth about histamin, but the escolar contain this
oil that is purgative and natural in the muscle.
