The National Fisheries Institute will offer a Sensory Evaluation Series
March 16-17, 2005 (after the Boston Seafood Show) at the USDC Gloucester
Inspection Office in Gloucester, MA.
The NFI invites U.S. importers and processors and overseas exporters to
attend a special workshop on how to assess the quality of Atlantic Cod,
Atlantic Pollock, Atlantic Flounder, Ocean Perch and Scallops. A two-day
workshop will be conducted for industry professionals responsible for
product specifications and quality assurance. Importers are encouraged to
invite their suppliers to participate. The workshop will cover the
principles of organoleptic evaluation of quality and familiarize attendees
with U.S. government standards for decomposition.
Maximum attendance for the workshop is 20. On the first day Atlantic Cod
and Atlantic Pollock will be covered. The second day will focus on
Scallops, Ocean Perch and Atlanitc Flounder.
The trainers will include sensory experts from the NOAA USDC Seafood
Inspection Program and the US Food and Drug Administration.
The workshop will be filled on a first-come, first-served basis. A
discount is offered for those attending both days.
