Does anyone have any jpeg photos of chalky halibut that they can send to me? I want to print one or two for a demonstration that I am doing on Halibut.
Also, I am curious if any processors find that pH meters are a reliable way to sort out chalky fish. If not, what is the best way in your opinion?
If processing a "Lot" of halibut, supposedly free of chalky fish, are there always some that were not detected? Any approximate percentages? Are they generally segregated, or are they packed with the rest?
