    Dear Chris

Yes, protein contents do differ both between and within fish species. The protein contents of the 3 species will differ, but I don't have any data to hand. Try searching food composition tables. Note that these quote crude protein, that is total nitrogen x 6.25. About 15% of total nitrogen in fish is non-protein nitrogen so the crude protein values overestimate true protein contents.

      KiOrana List members,

My question is, does the protein content differ between different species.

Would the protein content between Blue Marlin (Makaira mazara), Opah (Lampris guttatus) and Ahi (Thunnus albacares) vary?

And if so by how much.

      Thank you in advance,

      Chris Douglas.
