    Greetings:

    In a recent discussion on Quality Control efforts the subject of Honeycombing in Tuna came up.

    Can anyone tell me what level of abuse - time, temperature, etc.  would result in honeycombing.

    How long a fish would have to be left unchilled or unfrozen
    What level of temperature abuse would result in.
