2005 Seafood Technology Innovations Conference

                    The National Fisheries Institute (NFI) and partners, the University of Florida's Aquatic Food Product Program and the Florida Sea Grant Program, will be holding the 3rd Biennial Seafood Technology Innovations Conference this coming January 31 - February 3, 2005 at the Rosen Center Hotel in Orlando, Florida.
                     
                    Elizabeth Sloan, a Food Technology Magazine Editor and Consumer Trends column writer will present a talk to the plenary session concerning 'Dining & Dieting Trends.' Nutrition experts including Joe Hibbeln of the NIH will discuss the current state of knowledge regarding Omega-3 Fats, including its effects on the brain and nervous system, as well as trans-fat issues in a session entitled 'Good Fat, Bad Fat, Trans Fat.' FDA, consumer and industry representatives, including Sam Lehrer from Tulane University and Anne Muņoz-Furlong, Founder of The Food Allergy & Anaphylaxis Network, will address 'Allergen Control & Management in Food Processing Operations.'
     
                    An entire session is dedicated to helping companies with 'New Product Development & Rollouts,' led by some of the industry's biggest and best food & ingredients supply companies including Kraft General Foods. John Bode of the law firm Olsson, Frank & Weeda will be one of several experts talking about the current state of 'Seafood Health & Nutrition Claims.'
                     
                    On the first day of the Conference, the University of Florida and the Florida Sea Grant Program are hosting a special symposium entitled 'Use of Carbon Monoxide and Filtered Smoke' covering the scientific, regulatory and industry aspects of this technology, and the products produced from it. Other sessions include 'Tackling the Trace-Back Challenge,' and the 'Use of Modified and Controlled Atmosphere Packaging.'
