Sulfite treatment for shrimp

    Dear List members,

    Would anyone give some additional information on the
    concentration of sod. metabisulfite to prevent
    melanosis.

    We do fishing in Red sea which is quite warmer than
    rest of the seas. Water temperature ranges from 28 to
    34 C. Even the dip at 3000 ppm for 10 min at low
    temperature (10 C solution) immediately after catch
    results in melanosis. The residual levels of sulfite
    of such shrimp is found to be far below the level
    followed by EU.
