    Hello list,

    In fish fillets, if the total bacterial count is as low as 23,500 cfu/gm and coliforms are as high as 23,000 per gram what does this indicate? Is it contamination, or temperature abuse or lack of cleanliness. Appreciate an answer. Thanks.
