Australia produces beche-de-mer in the northern parts, especially in the
indigenpous areas. Another name to try is Trepang. I have a HACCP plan if
anyone needs it.

The FAO production statistics available in FishStat show the total
production of sea cucumbers in 2002 as 24 483 metric tonnes (mt) with not
much variation in previous few years. 81% of the production is accounted for
by 5 countries: Japan, 7 259 mt; USA (I imagine this is Hawaii rather than
mainland), 4 905 mt; Indonesia, 3 855 mt; Egypt, 2 310 mt; Papua New Guinea,
1 450 mt. Trade statistics might be available through FAO's Globefish at
http://www.globefish.org. Only 1 of 6 books on Asian cookery I have has
recipes for sea cucumbers, (and they were listed under bêche-de-mer), but
searching Google using "sea cucumber" (or bêche-de-mer) and recipes gives a
good haul.
