Here is a courtesy announcement about an upcoming seafood symposium and
aquaculture workshop being held at the annual meeting of the
International Association of Food Protection (IAFP):
At the annual IAFP meeting in Phoenix, the Seafood Safety and Quality
Professional Development Group (SSQPDG) will hold a committee meeting on
Sunday, August 8 from 1-3 pm in the President's Board Room at the JW
Marriott Desert Ridge Resort. The deadline for submitting symposium and
workshop proposals for the 2005 meeting in Baltimore occurs at 4 pm on
the same day. As the SSQPDG Chairperson, I am requesting input via
e-mail for suggestions on suitable topics and possible speakers for a
symposium. Please plan on volunteering to be an organizer, co-organizer
or convenor as this is a good way to network with other professionals in
the association and within the SSQPDG. Detailed information about

We are fortunate to have made a strong contribution to this year's
annual meeting with Symposium #22 "Packaging Innovations, Safety
Concerns in Seafood" organized by Marlene E. Janes (Louisiana State
University) and being convened by Marlene E. Janes (LSU) and Kathleen
O'Donnell (Wegmans Food Markets, Inc.). Here is the S22 Abstract:
The seafood industry looks to achieve superior product safety through
packaging technology. This symposium will explore advances in new
technologies related to seafood packaging that can control Listeria
monocytogenes and Clostridium botulinum in these products. Emphasis
will be placed on the impact of time and temperature on the growth rates
and on additional barriers that may improve reduced oxygen packaging or
modified atmosphere packaging performance to control Listeria
monocytogenes and
Clostridium botulinum in seafood. New technologies that will be
discussed are temperature monitoring with time-temperature indicators,
barrier films, OTR (oxygen transmission rate) packaging, and edible
coatings containing antimicrobial agents. Furthermore, the recent
acceptance by the FDA of time-temperature indicators and other newly
developed packing systems to control the risk of these pathogens in raw
refrigerated seafood products will be discussed. New packaging
technologies are evolving quickly and the insights from this symposium
could provide seafood processors new ways to achieve superior products
and researchers target areas needed for improvement in the design of
packaging systems to control foodborne pathogens.

Information regarding last year's, two well-attended SSQPDG-organized
and -convened symposia can be found on the IAFP web site (listed
above). In conjunction with this year's annual meeting, we have a
unique, entertaining, one-day workshop being offered on Saturday, August
7 from 8 am - 5:30 pm.
"Best Practices for Safe and High Quality Aquaculture Products" (Workshop 2): Aquacultured seafoods are an increasingly important component of global trade in seafoods. Overexploitation of natural harvests has created a growing interest in aquaculture to provide seafoods to a demanding public. Because aquaculture is a controlled enterprise, inventory control, quality, and safety issues are very different than wild catch products. This workshop is designed to give attendees an overview of practices necessary to deliver high quality and safe aquacultured products to today's discriminating consumer. The afternoon session will include an interactive field trip to Desert Sweet Shrimp Farm in Gila Bend, AZ.
