Thank you all for your comments and advice on smoked products and EU regs. Hope things evolve in due time with the Food Law Regulation (78/2002) so that Directive 2001/95/CE can be implemented to give industry some leeway, while still respecting HACCP/GMP/SSOP and the overriding principles of consumer food safety. Science-base risk analysis must eventually prevail over the antiquated notion of end-product microbiological testing, which unfortunately is still "in vogue" for official inspection on far too many occasions.
