    Post Doctoral Fellow - Muscle Foods Safety and Biochemistry
    Division of Animal and Veterinary Sciences
    WVU Davis College of Agriculture, Forestry, and Consumer Sciences

    This is a non-tenure track, full-time temporary position (initial appointment for one calendar year), funded through a USDA/CSREES Special Aquaculture Grant.

    Position Description: Reports to Dr. J. Jaczynski, Co-Principal Investigator. Duties and Responsibilities of the Position:

                    § Design and perform experiments that contribute to the objectives of principal investigator's funded projects, including:
                    * Protein and lipid recovery from Rainbow trout (Oncorhynchus mykiss) processing by-products.
                    * Development of value-added food products based on proteins and lipids recovered from Rainbow trout processing by-products.
    * Effects of electron beam on microbial inactivation, and biochemical and physichochemical changes in muscle foods.
                    § Write manuscripts that report results and submit them to peer-reviewed journals.
                    § Present research findings at scientific meetings.
    § Collaborate with other personnel contributing to the project, including graduate and undergraduate students and research assistants.

    Qualifications: Ph. D. in Food Science and Technology. Demonstrated research experience in both laboratory and statistical analyses relevant to protein and lipid biochemistry, and/or product development, and/or food microbiology; preferably including gel electrophoresis, isoelectric focusing, differential scanning calorimetry, gas chromatography, high performance liquid chromatography, texture and color analysis, bacterial enumeration techniques, and microbial inactivation kinetics. Effective written and oral communication skills are essential.

    Location: West Virginia University's main campus is located in Morgantown, a city of 45,000 on West Virginia's northern border, adjacent to Pennsylvania. West Virginia University is the state's major doctoral degree-granting, research university and is the state's land-grant institution. It serves over 23,000 students in 166 degree programs offered by 13 academic schools and colleges. The Davis College of Agriculture, Forestry, and Consumer Sciences has over 1800 students studying in baccalaureate, masters and doctoral programs. The West Virginia Agricultural and Forestry Experiment Station serves as the research arm of the Davis College, supporting projects and research important to the unit's mission.
