I have a question regarding
holding lobster, There is a supply shore the is hard to get to from our
factory, i.e basically what I am asking is that if we get lobster, dip it in
metabisulfate and keep it very well iced for seven days ( max ) before it
can be Blast frozen. Will there be a significant loss in quality. Your
expert opinions are highly appreciated.
