    Dear Mr. Kevin Lyman:

    As you said, the SSOP PLAN is a narrative description of a proper method applied to your processing plant for hygiene and sanitation. Nevertheless, through a daily Plant inspection you should register and mantein the records at list during two years in according to the mandatory US FDA Regulation. Your SSOP could be successful only if you have in place the current Good Manufacturing Practices (GMP), CFR, Part 110.

      A very belated Happy New year. My interprutation of a Standard Sanitation Proceedure is a Narrative Description of the proper method for sanitizing a seafood plant and its associated equipment.
