    Rebecca and Seafood List Subscribers,

When Rebecca's message was posted earlier today, I forwarded your inquiry
to Dr. Lucina Lampila (Prayon Inc.), author of the chapter, "Phosphates in
Foods" in Food Addtives (published by Marcel Dekker, 2001).

Dr. Lampila has replied that she too is willing to work with your company
or other seafood list subscribers with phosphate inquiries. Though not
subscribed to this discussion list, she prefers (for the purpose of
ensuring your confidentiality) that you e-mail her at:
    lucinalampila@prayoninc.com

    Dear Seafood Listserv:

We are assisting with the development of a value-added frozen fish line
and are having some conceptual difficulty with calculating both the
strength of the solution we are injecting and how much of this solution
must be actually injected into the fish. We are setting up an experimental
array evaluating such factors as type and amount of phosphate. Salt is
also being evaluated in the array. Can someone recommend a source of
    information?

Thank you for your replies. We have found the seafood listserv to be an
excellent source of information and we appreciate the professionalism of
    the participants.

    Sincerely,
    Rebecca Robertson
