Why do you call it a disease ?
Are the white masses in the picture soft and easily broken up with a probe
or fork ?
It looks like it may just be body fluids solidified by cooking. I have seen
soft white material ( cooked fluids) inside lobster shell, but admittedly
yours look very regular/symmetrical.
