Blue prawns

    I have just inspected some prawn (I believe they are Pandalus borealis)
    sandwiches in which the prawns had turned violet blue and were very soft
    textured. I have pictures if anyone would like to have a look.

    The sandwiches were made with both white and brown bread, they contained a
    little mayonnaise and lettuce. They were made 2 days before the inspection
    and were produced for us by the manufacturer who wanted to know what had
    happened. Micro analyses are incubating at the moment but in the meanwhile
    I am seeking your opinions.

    My feeling is that it is advanced spoilage, but I do not know what agent
    causes the change in colour.

    Any information would as usual be gratefully received.
