I sat in on the conference call 15 Oct 2003 with FDA about fresh crabmeat.
FDA wants TTIs on all 5 pound hermetically sealed containers of fresh
crabmeat. Five pound frozen vacuum packed containers do not need TTIs. A
summary of the conference call is attached.
The only exception for the TTI requirement is for small containers that can
use a plastic snap lid. The snap lid is not considered a hermetic seal and
therefore these packs are not considered a C. bot. problem. The tamper
evident or resistant seal on the plastic snap top is a processor's option,
but is not required by FDA.
FDA suggested that the summary of the conference call be sent to west coast
crab and seafood associations, etc., so that everyone would be aware of the
discussion. That is probably why you received a copy of the summary.

Hi all,
I was hoping that this topic would have been brought up today but since it
hasn't then I will look forward to some good information. We have been told
over a number of years that the FDA was going to eventually make some
changes concerning 5# cans of fresh vacuum packed crabmeat. I was surprised
to find an email from West Coast Seafood Processors that a meeting took
place the 16th and we are now required to use TTI's on every can of crabmeat
or to freeze,also we will have to do the same on all packed crabmeat unless
we choose to remove the metal lid and use a plastic snap lid also having to
use a tamper evident or resistant device. This ruling to now be in
enforcement mode from FDA. I was curious about one page of this information
that was emailed to a large number of companies which actually gave
advertising to a company called Vitsab. Did anyone else have any thoughts on
this who had also recieved this? Just what does the tamper proof seal have
to do with c-bot which is what this entire this concerns?
