    Good morning,
    Sodium metabisulphite compounds are commonly used in Australia, to
    prescribed limits, to control melanosis (black spot) in shrimp. When misused
    ( too concentrated and/or too long a dip) it can lead to problems and
    complaints: from consumers re taste/allergic reactions and from fishermen
    and chefs reacting to strong fumes emanating from the powder/solution and
    the treated shrimp respectively.
    Many shrimpers have moved over to using a GRAS hexylresorcinol compound to
    avoid these problems.
