dear members,
1. In headless shrimp after individual quick-freezing and
immediately after deglazing we are getting some weight gain. Need
some information on weight loss or gain during quick freezing.
(Freezing by ammonia gas, manual glazing and immediate deglazing
before going to the cold store)
2. During plate freezing some weight loss will come. But while
refreezing the shrimp the drip loss is coming very less.
Any help on where to link up for such info would be highly
appreciated
