Terry,
It sounds like you have a myxosporidea infestation in your fillets. This is
common parasitic infection in flatfish.
Sometimes the parasite is not evident when the fillets are first thawed and
may take 24 hours to show up in the flesh. Any flat fish inspection should
include holding the fillets at a chilled temperature for 24 hours to check
for the parasite.
