    Hi All,
Does anyone know what these round white spots in flounder fillet could
be? On average, they are 1/8 to 1/4 inches in diameter. They are almost
pure white, and the flesh is very soft (almost disintegrates to the touch.)
It's as if there was ice on top of the fillets and melted, resulting in a
bleaching out of the flesh. I don't think this is what caused it, however,
because there's no excessive water in the cases and I'm finding this
throughout the cases. I'm finding this in about 10% of the lot. I see no
evidence of any parasites. The product is being cut in Canada.
         Any answers will be appreciated.

    Thanks
    Terry
