Hi Jose:
The best method which we have encountered to date involves
placing the fish in a 2 cubic m plastic fish box with seawater and
adding 20 ml clove oil (available at most drug stores) dissolved in
about 100 ml 95% ethanol. The fish become lethargic after about 5
min and then can be handled easily. We then dispatch the fish
with a brain spike ("ike jime" in Japanese) and bleed by cutting the
gills.
Our procedure has been fully approved by our animal care
committee here at the University and I can assure you that it gives
superior results in terms of shelf life and quality!
