    This topic has been discussed in previous exchanges. Carbon monoxide is not a permitted food additive in the EU so its use with fish, and other foods for that matter, is not permitted. I will leave others to summarise the regulatory situation in the USA.

      Can anybody point me in the right direction regarding maximum limits, if there are any, for Carbon Monoxide (CO) with regard to treatment of seafood products to the USA and the EU?
       
      I am aware that CO treatment can mask olfactory decomposition and scombrotoxin formation but are there any allowable limits for its use?
