    Jette,

I received no replies to my message about white spots in tuna flesh. I did
find the following web site about white spots in salmon caused by a
    parasite, Ichthyophonus.

    Hei

Have you recieved any answers about your question of white spots. We have
the same probelm in smoked salmon - se picture. They are certainly not CO2.
We have seen it for the last 10 years. The spots is seen more clearly in
vacuum packages. Some people say it has something to do with multiple
freezing or with the kind of salt used.
