Arrowtooth flounder going green

    Does anyone know why Arrowtooth Flounder fillets sometimes turn green after they have been frozen (IQF) and held in cold storage for a few weeks ? If this is due to enzyme activity is it from the flesh or from a parasite ? I know several companies in BC have experienced this phenomenon and any suggestions as to the cause or cure would be helpful.
