Victor Garrido at the U. of Florida usually holds a couple of HACCP
courses in Spanish during the year. He's actually conducting one today.
His phone number is available at:
    http://seafood.ucdavis.edu/haccp/training/fl.html

The 2nd edition was translated into Spanish. I don't know if it is still
available. Victor can probably advise you on the availability of this
manual. (A web version is accessible via:
    http://seafood.ucdavis.edu/haccp/othersources.htm -- This is a scanned
version of the manual. There is no comparison between the scanned quality
and the hard copy version of the manual.)

The Sanitation Control Procedures Manual is now available in Spanish from
the University of Florida. Go to:
    http://seafood.ucdavis.edu/haccp/training/training.htm (select: Training
    Materials (Vendor: IFAS Extension Bookstore)

The USDA/FDA HACCP Training Programs and Resources Database has resources
available in English, Spanish, French, Japaense, Korean and Chinese at
    http://www.nal.usda.gov/fnic/foodborne/haccp/index.shtml

On the UC Davis Seafood Network Information Center,
    http://seafood.ucdavis.edu/Pubs/99resources.htm has some Spanish
resources. I suggest doing a "search and find" with your browser to
easily locate the information on this web page which is over 18 pages long.

In March 2002 Ken Gall (Cornell University, director of the Internet HACCP
Alliance course) informed me that there were plans to offer the HACCP
Internet course in Spanish, but this project was shelved due to a lack of
funding. As of March Ken mentioned that there were no current plans to
    initiate a Spanish Internet version.

    Regards,

    Pamela Tom
