Could any one give me details on the best practices to be followed while handling fresh head on shrimps regarding icing. and prevention of melanosis. Sodium metabisulphite is helpful but wut is the best concentration in which it can be used so that the residual suphite doesnt exceed 10 ppm.Please do come up with all your ideas. Also does the extent of melanosis vary with the species??
