    I do not believe animals retain mercury forever. In humans, once the
    dietary source of mercury is removed or stopped, mercury levels gradually
    return to normal. Mercury levels in the hair remain high for an extended
    period of time.

    I haven't seen any literature on concentrating mercury by water removal,
    but it sounds logical. I think tuna jerky processors are concerned about
    increased mercury in the final product.
