Octopus is used as food and it also makes a very durable bait (as it
stays on the hook a long time.)

There are major differences in price based on size and species. The
high end species (I think) is Octopus vulgaris which is used for
making sushi (the Japanese name for octopus is tako. The common
Japanese species is Octopus vulgaris (which is called madako). The
species is also found on the east coast of the America's and in
    Europe/Africa.

There is a small market for octopus ink.
