    Dear Listers,

    My department has published 2 books. These are:

    1) A Guide to the Grading of Fish and Shellfish

    This book endeavours to guide fish wholesalers, retailers, processors,
    inspectors and technologists who are confronted with the need to use
    sensory tests to evaluate the quality of fish and shellfish under iced
    storage. It also aims to objectively reflect the sensory change changes
    in fish and shellfish with the chemical, biochemical and microbiological
    indices. The book has been made user friendly by organizing the data as
    simply as possible and by providing many coloured plates of fish and
    shellfish at different stages of spoilage to serve as a basis for
    comparison.

    2) Handbook on Tuna Products

    MFRD has been developing interesting tuna by-products over the years to
    meedt he demand of waste utilization as highlighted by the fish
    industry. The products processed are tuna loaf, tuna chunk sausage,
    barbecued tuna slice tuna steak, and seasoned tuna cubes which are
    healthy alternatives of snacks consumed by children and others. There
    are pictures which show the step-by-step methods of the production of
    these tuna by-products.

    Both books are available for S$15.00 (Singapore Dollars Fifteen only)
    each, excluding courier charges. Please contact Miss Lay Yong Tan if you
    are interested in acquiring them.

    By the way, today is my last day serving as the Librarian of the Marine
    Fisheries Research Department, Singapore. With effect from 1 Feb, Miss
    Lay Yong Tan is the new librarian. It has been a pleasure to get to know
    many of you through this discussion group. The research staff of this
    department have learnt a lot and so have I. May I wish all of you
    success in your future endeavours.
