     SHRIMP SCHOOL 2002

    The University of Florida's Aquatic Food Products Program continues the
    annual series of ShrimpSchools dedicated to advancing shrimp product quality
    and safety. This technical program features current and basic topics
    through lectures and actual hands-on training. The 2002 program includes
    training with sensory indicators for shrimp decomposition and filth, an
    update on the antibiotic situation including chloramphenicol, an overview
    on FDA's activities related to Salmonella in shrimp farming and processing,
    FAO's Ecoport-the future in shrimp quality and safety communication, Good
    Aquaculture Practices (GAP), HACCP/Sanitation and other topics of interest
    such as sulfites, phosphates and official
    sampling and laboratory analyses.

    The decomposition and filth training will be conducted in cooperation with
    the leading FDA decomposition and filth experts. All other training will be
    conducted by experienced speakers from University of Florida and the private
    industry. The training will combine lectures with daily laboratory
    experience and demonstrations. This program is useful for experienced and
    new suppliers, processors,buyers, importers, exporters, inspectors/quality
    control managers and others including in the private
    industry from management through production. All participants will be
    provided with certificates ofcompletion for future reference as alumni of
    the UF-Shrimp School.

    Lodging and Meals
    Special room rates have been arranged at two hotels, conveniently located
    near many restaurants and
    shopping centers.

    The Cabot Lodge:
    This hotel is located off Archer Rd, east of interstate 75 and accessed by
    interstate exit no. 75. The rates
    are $ 62 plus tax per night. When registering request the "UF-Shrimp School
    rate". This rate includes
    daily continental breakfast and late afternoon beverages. The telephone
    number for this hotel is 352-375-
    2400.

    Courtyard by Marriott:
    This hotel is located right next to the Cabot Lodge, off Archer Rd, east of
    interstate 75 and accessed by
    interstate exit no. 75. The rates for this location is $85.00 plus tax per
    night. This hotel offers a hot
    breakfast buffet for $6.95. When registering request the "UF-Shrimp School
    rate". The telephone
    number for this hotel is 352-335-9100.

            In order to get these rates, hotel reservations need to be made by
    April 26, 2002.

    The training schedule will include breaks, but all daily meals are on your
    own. Numerous restaurants
    surround the campus and hotel area. Many are within walking distance on a
    clear day. Advice will be
    provided for special tastes and local events.

    On Wednesday night, May 15, there is going to be a complimentary social at
    the Gainesville Ale House.
    This restaurant is within walking distance from both hotels.

    Transportation and Parking
    Delta and US AIR are the major airlines servicing Gainesville. Passengers
    arriving to Gainesville may
    rent a car or take a taxi to the hotel(s). Optional service and rates are
    available through Jacksonville and
    Orlando, particularly for international travelers. Both airports are
    located two hours driving distance from
    Gainesville. All major rental cars companies have locations in both
    airports, as well as in Gainesville.

    Complimentary daily transportation to and from the University will be
    provided. The bus can be
    identified by a sign reading "Shrimp School " on the front windshield. The
    Bus will depart the Cabot
    Lodge hotel at 7:45 am and the Courtyard by Marriott at 7:50 am. Passes for
    daily parking on campus
    (approx 3.5 miles from the hotel) can be provided on request.

    Registration
    The course will be limited to 25 registrants. The limited class size
    assures an effective teacher to
    student ratio. The course registration fee (US $295.00) is based on cost
    recovery for materials and
    instructors travel. The registration fee is non-refundable for
    cancellations after April 26, 2002.
    Registration is on a first come first serve basis. To secure a position,
    interested participants should fax or
